Honey is among the most adulterated foods in the world. That part is not controversial, and it matters to anyone buying honey, including us.
What is less often said is that most of the advice circulating on how to spot fake honey at home does not work. Some of it would fail our own honey. So this is both an explanation of the problem and an honest account of what you can and can't tell from your kitchen.
What Honey Fraud Actually Is
Honey fraud takes several forms:
Dilution. Bulking honey with cheaper sugar syrups, usually rice, corn or beet syrup. Modern syrups are engineered specifically to evade the standard tests.
Origin fraud. Shipping honey through third countries and relabelling it to disguise where it came from, typically to avoid tariffs or hide production practices. This is where the term honey laundering comes from.
Processing fraud. Ultra-filtration removes pollen, and pollen is the biological fingerprint that lets a lab determine which flowers and which country a honey came from. Remove it and the honey becomes untraceable.
The Scale
A European Commission coordinated action published in 2023 found that 46% of imported honey samples tested were suspected of being non-compliant with the EU Honey Directive, including all ten samples originating from the UK. The UK's Government Chemist notes that testing methods remain contested and the true extent is genuinely uncertain, which is itself part of the problem.
The economics explain why it happens. Producing genuine honey costs money: hives, labour, time, seasons. Syrup costs a fraction of that. When the two look identical on a shelf, the incentive is obvious.

Enforcement Has Been Real
This isn't hypothetical. In 2013, US federal prosecutors charged executives of the German food conglomerate Alfred L. Wolff GmbH over a scheme to import Chinese honey through third countries, concealing its origin to avoid anti-dumping duties. Some of the honey involved was found to contain antibiotics not authorised for use in food production. It remains one of the largest food fraud prosecutions in US history.
The pattern the prosecutors described, routing product through countries with no capacity to produce the volumes they were exporting, is the defining signature of honey laundering.
On the Manuka Question
It has been widely reported that far more honey is sold internationally as Manuka than New Zealand could possibly produce, which necessarily means a large share of it isn't what it claims to be. New Zealand introduced a government definition and export testing standard in 2018 partly in response.
Various figures circulate for what proportion is fraudulent. We'd rather not quote a specific percentage, because the sourcing for the commonly repeated numbers is weak and this article is about not repeating unverified claims.
Why the Popular Home Tests Don't Work
Search for how to spot fake honey and you'll find the same three tests everywhere. We used to recommend them ourselves. They don't work, and it's worth explaining why, because relying on them can mislead you in both directions.
The Thumb Test
The claim: real honey stays in a bead on your thumb, fake honey runs.
The problem: this tests viscosity, which depends on water content and sugar composition, not authenticity. Genuine honeys vary enormously. Our own Trigona honey has water content around 23 to 28%, considerably higher than typical Apis honey, so it runs. It is entirely real. By this test it would fail.
The Water Test
The claim: pure honey sinks in a lump, fake honey dissolves.
The problem: again a function of density and water content. Higher-moisture honeys disperse more readily. Thick, low-moisture adulterated honey can sink perfectly well.
The Refrigerator or Crystallisation Test
The claim: real honey crystallises, fake honey doesn't.
The problem: crystallisation depends on the glucose to fructose ratio of the particular honey. High-fructose honeys such as acacia stay liquid for years and are entirely genuine. Stingless bee honey resists crystallising too. Meanwhile some syrup blends crystallise readily.
The honest position: you cannot reliably determine honey authenticity in a domestic kitchen. Detecting modern adulteration requires laboratory techniques such as nuclear magnetic resonance spectroscopy and stable carbon isotope ratio analysis, and even experts disagree about interpretation.
What Actually Helps
Since the tests don't work, the answer is provenance rather than examination.
Ask what species and what origin. A producer who can name the bee species, the region and the season is a producer with a real supply chain. Vagueness on origin is the single biggest signal.
Look for independent testing. Not the producer's own marketing claims, but laboratory analysis they'll show you. We publish ours on our research page.
Treat blends with more caution. "Blend of EU and non-EU honeys" tells you nothing about origin, and blending is where most adulteration has been found.
Be realistic about price. Genuine honey has a production cost floor. Honey priced far below the market is worth questioning, though a high price guarantees nothing on its own, as the Manuka situation demonstrates.
Buy closer to the source where you can. Local beekeepers, farmers' markets, producers who will answer questions. Shorter supply chains mean fewer opportunities for substitution.

Why This Matters Beyond Your Toast
Adulterated honey undercuts genuine beekeepers, who cannot compete with syrup on price. That pressure pushes people out of beekeeping, which matters because bees pollinate a very large share of what we eat.
There's a food safety dimension too. Some seized shipments have contained antibiotics not permitted in food production. That's a reason for proper testing and enforcement rather than a reason for alarm about honey generally.
And there's a simpler point: you paid for honey. You should get honey.
Where We Stand
We test our honey independently rather than asking you to take our word for it. Our bees are Tetragonula biroi, kept on fruit farms in the Philippines, and we can tell you which crops they pollinate. The honey is raw, unheated and unfiltered, which means it retains its pollen, which in turn means it remains traceable to its source.
It's also thin, sour, and doesn't crystallise readily. If you apply the popular home tests to it, you'll conclude it's fake. It isn't. That's rather the point of this article.
