Under the Codex Alimentarius standard, honey is a natural sweet substance made by bees from the nectar of plants, stored and dehydrated in the hive. Nothing added, nothing taken away.
That definition matters, because a great deal of what is sold as honey doesn't meet it. This is a look at how adulteration actually works, what it costs beekeepers, and why the economics make it almost inevitable.

Why Honey Is a Target
Honey has genuine value: it's expensive to produce, supply is limited by biology and season, and demand keeps rising as people look for alternatives to refined sugar. That combination is exactly what attracts fraud.
The US Food and Drug Administration has a term for it: economically motivated adulteration, defined as the fraudulent, intentional substitution or addition of a substance to increase a product's apparent value or reduce its production cost.
How Honey Is Adulterated
Dilution
The most common method. Genuine honey is extended with cheaper sweeteners: corn syrup, cane syrup, rice syrup, palm sugar, invert sugar, beet syrup. Modern rice syrups in particular are engineered to mimic honey's sugar profile closely enough to pass standard testing.
Blending
Mixing expensive honey with cheaper honey that looks similar. A well-documented example is blending costly acacia honey with cheaper rapeseed honey, which resembles it closely.
Sugar Feeding
Supplemental feeding with sugar syrup is a normal and sometimes necessary part of beekeeping, particularly to sustain colonies through winter or early spring before nectar flows.
Intensive supplemental feeding is a different matter. When colonies are fed heavily during production, the resulting honey has a sugar profile closer to syrup than to nectar-derived honey, and its nutritional character is diluted. We regard that as a form of adulteration, though it sits in a grey area of the rules rather than a clear breach.
Antibiotic Residues
The USDA approves ten chemicals for use in honey bee colonies, three of them antimicrobials. Approved use requires a withdrawal period, during which honey from treated hives should not be collected. Unapproved drugs, or approved drugs used without proper withdrawal, leave residues in honey. This is a recognised food safety issue and a reason honey imports are tested.
Masking Country of Origin
Honey is shipped through intermediate countries and relabelled, which allows producers to sidestep tariffs and additional testing. This is the practice known as transshipment or honey laundering.
A related technique is ultra-filtration to remove pollen. Pollen is what allows a laboratory to identify a honey's geographic origin, so removing it makes the honey untraceable.

What This Means for People Eating It
The health effects of consuming adulterated honey are not fully established, and it's worth being straightforward about that rather than overstating the case.
What can be said:
You lose what you were paying for. Honey's antibacterial and antioxidant activity comes from compounds present in nectar-derived honey. Dilute it with syrup and those are proportionally reduced. You've bought a functional food and received a sweetener.
The sugar profile changes. Adulterants such as high-fructose corn syrup have different metabolic effects from honey's own sugars. For anyone watching glycaemic load, that matters, and it's not disclosed on the label.
Animal studies raise questions. Rodent studies have found metabolic and organ effects in animals fed sugar-adulterated honey compared with controls, including changes in weight, lipid profile and markers of kidney and liver function. These are animal studies at controlled doses, and they don't translate directly to human dietary exposure. They're a reason for concern and further research rather than a basis for firm conclusions about human health.
Antibiotic residues are a genuine safety issue. Residues of substances such as chloramphenicol and nitrofurans have been detected in seized honey shipments. These are not permitted in food production, and their presence is precisely why import testing exists.

What This Means for Beekeepers
This is the part that gets less attention and matters most.
Bees worldwide are under pressure from insecticides, parasites, monoculture and climate change. Production is falling in many regions.
Under normal economics, falling supply against rising demand should push prices up. That hasn't happened, because the shortfall has been filled with cheap adulterated product.
The Price Gap
The economics are stark. Historic bulk pricing put honey at roughly USD 3.80 per kilogram, against around USD 0.70 for high-fructose corn syrup and USD 1.20 for refined beet sugar. Adulterants have run three to five times cheaper than the product they're diluting.
A 2020 paper from Copa-Cogeca, the EU farmers' cooperative, noted imported Chinese honey entering the EU at around USD 1.30 per kilogram, against an average EU production cost of USD 3.90. No European beekeeper can compete with that, because no European beekeeper can produce honey below cost.
The Volume Discrepancy
Chinese honey exports rose 88% between 2000 and 2014, while the number of honeybee colonies in China rose only 21%. Bees cannot produce substantially more honey per colony on command. That gap is the clearest single indicator that something other than honey is being exported.

Why It Becomes a Cycle
Cheap imports push prices down. Beekeeping stops paying. Beekeepers leave, or shift their colonies to pollination services rather than honey production. Genuine honey becomes scarcer, prices stay suppressed by adulterated supply, and the incentive to adulterate grows.
The FAO estimates pollinators are responsible for around 35% of global food crop production, and in Europe pollinators contribute billions annually while supporting pollination for the large majority of crops and wild plants. If beekeeping stops making economic sense, that capacity doesn't simply persist on goodwill.

Where We Sit In This
Sourcing genuinely unadulterated honey turned out to be a much harder problem than we anticipated when we started. There are a lot of variables and every one of them has to hold.
What we do about it: we work directly with our beekeepers in the Philippines rather than buying through brokers, we can tell you the species (Tetragonula biroi) and the farms, and we test independently rather than asking anyone to take our word for it. Those test results are published.
Our bees are not sugar-fed. The honey is raw, unheated and unfiltered, which means it retains its pollen and stays traceable.
None of that makes us unusual in ambition. Plenty of small producers work this way. What it does mean is that the details are checkable, which is more than most honey on a supermarket shelf can offer.
