Does Real Honey Crystallize?

Your honey has gone grainy and solid. Nothing is wrong with it.

Crystallisation is one of the most misunderstood things about honey, and the internet is full of confident advice about what it means. Some of that advice is right. A fair bit of it isn't, and it depends entirely on what kind of honey you have.

Why Honey Crystallises

Honey starts as nectar. Bees process it with enzymes, including glucose oxidase, and fan it with their wings until most of the water evaporates. What's left is a supersaturated sugar solution: typically over 70% sugar and under 20% water for ordinary Apis mellifera honey.

Supersaturated means the liquid is holding more dissolved sugar than it naturally can. That's an unstable state. Over time the glucose precipitates out, forming crystals and separating from the water.

So crystallisation isn't decay. It's a supersaturated solution doing what supersaturated solutions do.

What Affects How Fast It Happens

1. Filtration

Raw, unfiltered honey crystallises faster. Crystals need something to form around, and pollen grains, bits of beeswax and other small particles all provide starting points. Remove them and crystallisation slows.

2. Sugar Composition

This is the big one. Honey is mostly glucose and fructose, and the ratio between them decides almost everything.

Glucose is less soluble than fructose, so honeys high in glucose crystallise quickly. Clover, lavender and rapeseed honeys all fall into this group and can set within weeks.

Fructose is more water-soluble, so honeys high in fructose stay liquid far longer. Acacia and tupelo can remain runny for years.

Both are entirely genuine honey. The difference is which flowers the bees visited.

3. Temperature

Around 14°C is the sweet spot for crystallisation. Warmer or colder than that and it slows or stops.

Which explains something you may have noticed: supermarket honey that never sets. That's usually pasteurisation, high heat treatment, combined with ultra-filtration to strip out pollen. Both processes suppress crystallisation. Both also remove much of what makes raw honey worth buying, and ultra-filtration in particular makes honey untraceable to its origin, which is why it's associated with honey fraud.

Is Crystallised Honey Still Good?

Yes. It's unchanged nutritionally, and some people prefer it, since it spreads more like butter and drips less.

Creamed honey, sometimes sold as set or whipped honey, is just crystallisation under control: the process is managed so the crystals stay very small, giving a smooth texture rather than a grainy one.

How to Make It Liquid Again

Stand the jar in a warm water bath at around 40°C for fifteen minutes or so, until it loosens. Make sure the water comes up as high on the jar as possible.

Keep it gentle. Hot water or a microwave will liquefy honey faster and destroy the enzymes and beneficial compounds while doing it. If it hasn't worked after fifteen minutes, give it longer rather than hotter.

The Bit That Confuses People

You'll often read that real honey crystallises and fake honey doesn't. It's the most repeated authenticity test in the category.

It holds for one kind of honey and not for others.

For Apis mellifera honey, crystallisation is a reasonable signal that the honey is raw and minimally processed, since pasteurisation and ultra-filtration suppress it.

It does not apply to stingless bee honey. Our Trigona honey comes from Tetragonula biroi, a different species with different biology. Their honey has naturally higher water content, around 23 to 28% against under 20% for ordinary honey, so it never becomes supersaturated in the same way. It stays liquid because of what it is, not because of what's been done to it.

Nor does the test work in the other direction. Acacia and tupelo honeys are genuine and stay liquid for years. Some adulterated blends crystallise perfectly well.

So crystallisation tells you something about processing, sometimes, for one species. It doesn't tell you whether honey is authentic. We've written more on why the popular home tests don't work and what to look at instead.
