On the Taste
One thing Yoko raised that we hear often:
"I have purchased various types of manuka honey in the past, but generally find them too sweet. Anaya's trigona honey has a lovely sweet-sour taste."
The sourness is characteristic of stingless bee honey and comes from its organic acid content, principally gluconic and lactic acids, alongside a sugar profile quite different from Apis mellifera honey. We've written separately about why Trigona honey tastes sour.
